Your body's stress system was built to outrun a predator and then switch off. The trouble is, the modern predator is your inbox — and it never really goes away. Here's the science of cortisol, and the surprisingly ordinary plants that research suggests can help you meet it.
In the 1930s, a young Austrian-Canadian researcher named Hans Selye was injecting rats with various extracts and noticing something odd: no matter what he injected, the animals developed the same cluster of physical changes — enlarged adrenal glands, shrunken immune tissue, stomach ulcers. Eventually he realised the changes weren't caused by the substances at all. They were caused by the distress of the experiments themselves. Selye had stumbled onto a universal biological response, and he needed a word for it. He borrowed one from physics and engineering: stress.
It's a wonderful piece of trivia that Selye, whose first language wasn't English, later regretted the choice. He felt he'd misunderstood the term, and that if his English had been better he would have called the phenomenon "strain" — the load that acts on a material — rather than "stress," the force applied to it. Nearly a century later, we are all fluent in the word he wished he'd never used.
Selye built on a foundation laid by the Harvard physiologist Walter Cannon, who in 1915 had coined the phrase "fight or flight" to describe the body's emergency response. Together, their work opened the door to understanding one of the most important — and, today, most misunderstood — molecules in human biology: cortisol.
When the Alarm Won't Switch Off
Cortisol has a public-relations problem. It's been branded "the stress hormone," which makes it sound like a villain. It isn't. Cortisol is essential: it wakes you up in the morning, mobilises energy, regulates blood sugar and blood pressure, and helps control inflammation. A body with no cortisol at all is a body in serious trouble.
The problem isn't cortisol. The problem is timing. Our stress response evolved to be brief and decisive — a surge that helped a hunter-gatherer sprint from a predator, followed by a return to calm. It was never designed to run continuously. But a modern nervous system can't tell the difference between a charging animal and a difficult email, a looming deadline, or a phone that won't stop buzzing. The same ancient alarm fires — just quietly, and constantly. This is the real issue behind the current "cortisol" conversation: not the occasional spike, which is healthy, but the low, chronic hum that never fully switches off.
And here is where nutrition enters the story — not as a magic off-switch, but as genuine support for a system under sustained load. No food "lowers cortisol" on demand; sleep, movement, sunlight, and real rest remain the foundation, and nothing in a glass replaces them. But decades of research have identified specific nutrients and plant compounds that the stress-response system genuinely draws on. And several of them are hiding in very ordinary fruits and vegetables.
The Problem: Stress Drains Your Vitamin C — and Few People Know It

Magnesium is one of the quiet casualties of modern life. The Real Point
Step back from the individual nutrients, and a calmer picture emerges — one that runs directly counter to the frantic, hack-obsessed way "cortisol" is usually discussed online. There is no single food that switches off your stress hormone, and anyone promising one is selling something. What the science actually shows is quieter and more reassuring: that a stress-response system under sustained load draws on specific, identifiable resources — vitamin C, steady blood sugar, anti-inflammatory compounds, magnesium, a well-fed gut — and that these happen to be found in some of the most ordinary plants on earth.
Hans Selye spent his life studying the "strain" he wished he'd named more precisely. What he understood, long before the wellness industry discovered the word, was that stress isn't something to eliminate — it's something the body is built to meet, provided it has what it needs. Sleep, movement, and rest do most of that work. But the plants on your plate, and in your glass, have a real and researched supporting role. Nature, as ever, got there first.
